Cheshire Pork® Baby Back Ribs
Apricot Chipotle BBQ Sauce (see video instuctions for full recipe)
Heat your grill to 225°F and add hickory smoking chips (if you are using a charcoal grill). Remove the membrane from the back of the ribs and season generously with salt and pepper.
Place rib-side down on the grill and cook for 2 hours.
After 2 hours, remove the ribs and wrap them in aluminum foil. Place the wrapped ribs back on the grill for 1 more hour.
Open the foil and coat the ribs generously with Apricot Chipotle BBQ Sauce. Cook for 1 additional hour, and then remove and let rest before serving.
